This coffee comes from approximately 700 smallholder farmers in the Guji region of southern Ethiopia. Grown at elevations between 1,800 and 2,000 meters, the cherries are delivered to the Shakiso washing station, where they're carefully sorted before being dried whole on raised beds using the traditional natural process. Drying the fruit around the bean allows the coffee to develop the juicy, fruit-forward character Ethiopia is famous for.
In the cup, expect notes of blackberry, red grape, and dried fig, balanced by a silky body and lively acidity. It's the kind of coffee that keeps revealing something new as it cools, making it a favorite for pour-over while still producing a beautifully expressive drip coffee.
